His restaurant and bar is now a favorite night spot for many, including foreigners who make it their bounding duty to be there to savor his special dishes. His Wednesday night finger-licking callaloo crab is the favorite dish for many people. On Wednesdays his promise is transformed into an atmosphere of fun as the music of local bands and the fragrance of a variety of dishes fill the air: Creole Crabs, lobster, shrimp and other goodies. When quizzed as to whether he would be willing to give someone the recipe for his delicious crab sauce which he calls "Special JJ Crab" he said "It's no secret. If anyone wants the recipe they can get it, but I doubt they will be able to do it as good as I do, " he said with a smile! He added: "It's my own creation. I did not get it from any book!"
Sit, relax and enjoy their seafood specials with a variety of fine wines, or simply feast on prime meats and poultry. The restaurant is open daily from 10.00 am and Happy hour is from 17.00 to 19.00.

Louise
and Normand's favorite restaurant, The Coal Pot has been a fine dining
experience for the last forty years. Michelle Elliot and her French husband,
Xavier, own and manage the restaurant - voted Restaurant of the Year in 1999.
Michelle is the elegant hostess, Xavier is the chef, sans pareil.
New World cuisine, the marriage of the freshest Caribbean ingredients with simple, yet exquisite, French cooking methods, is the Coal Pot's trademark. At lunch, a daily special is served alongside dishes like Greek and shrimp salads. Fresh local fish, prepared in a variety of excellent sauces, is an ideal lunch choice. Dinner, with linen service, is a relaxed affair. Coquilles St. Jacques and smoked salmon add a continental flair to local delicacies, such as curried chicken served in a coconut shell. There is also a selection of fine wine.
The Coal Pot's ambiance is as special as the cuisine. The walls of the wood open-air structure are decorated with colorful Caribbean art. These acrylic and water designs are Michelle's imaginative creations. Just a few feet away from the dining tables, the waters of the Vigie Marina lap against the coral stone beach. On full moon nights, tables are set under the stars.
The Coal Pot is not only a food lover's delight but an intimate place to lunch and dine!

Chef Jack had been travelling the world for 15 years when he arrived in St. Lucia almost 9 years ago, he bought with him a great appreciation for indigenous ingredients and he has developed his own style of fusion cuisine that combines fresh local ingredients with his French cooking methods and flare for creativity.
Although
the menu has a great selection of meat and vegetarian dishes, Jack specializes
in fish and seafood, he made some good friends and contacts in the fishing
industry when he lived in the fishing village Soufriere for 4 years when he
first came to the island, and can often be seen on the dock in front of the
restaurant chatting with fishermen and surveying their fresh catch for unusual
delicacies. He shops personally and can be found daily scouting the market
stalls, and other local suppliers, looking for just the right ingredients, the
result is meals cooked to perfection. Chef Rioux mixes his own spices and
seasonings and, like most French Chefs, he is a talented sauce maker, he also
enjoys smoking his own meats and fish.
Jack’s knowledge and love of wine shows in the wine list, it carries an interesting selection of wines from both France and the new world. The cocktail menu is extensive and contains old favourites and some interesting new ones, try "Jack’s Amazing Electric Frog"!
Cathy Rioux, the chef’s wife is the hostess at Froggie Jacques Tropical Bistro, and the service is friendly and efficient. The restaurant is set in a tropical garden over-looking Vigie Cove. Every evening the water is lit up to enhance the dinnertime ambiance and the night view of Morne Fortune across the harbour is mesmerizing.
The lunch menu is casual and brought to you on a blackboard. Dinner is a la carte and each dish is prepared to order. Popular selections include starters like octopus and conch in spicy passion fruit sauce, squid in lime and chive sauce and main courses of fresh catch of the day in Tamarind sauce, or boneless chicken stuffed with local smoked fish in a citrus sauce.
Froggie Jacques Tropical Bistro is open for lunch and dinner from Monday and Saturday and closed on Sunday. Reservations are advised. Most credit cards are accepted.
